Frozen Clams in Shell
Small clams, frozen live in the shell, cleaned and graded. A 2 kg pack for soups, garlic butter pans and quick chilli stir-fries.
What is in the pack
- Whole bivalves in banded shells
- 2 kg per pack
- Rinsed and sorted for even size
Flavour and texture
Plump meat with a clean briny sweetness that seasons the liquid around it. The shells open quickly in heat, which makes them a good measure of when the dish is done.
How to cook
- Soup: bring stock to a simmer with ginger, add the shells and cook until they open, then finish with greens and tofu
- Chilli garlic: fry garlic and chilli in oil, add the shells and a splash of rice wine, cover for two minutes
- Steamed: steam with white wine and herbs and serve with the juices
Discard any shell that stays shut after cooking.
Storage
Keep frozen at -18 °C or below. Cook straight from frozen or after a slow thaw in the refrigerator; do not refreeze.
